Well I can only think of Clint Eastwood in 'The Bridges of Madison County', but what a great movie that was.

Even I, as a bloke, was shouting "Get out of the car!" at Meryl Streep at the end of the movie.

To anyone who hasn't seen the film, go on, you know you want to.

Former combat cameraman Mike Kovac is now a freelance photographer in New York City, specializing in difficult and dangerous assignments where he can get the kinds of pictures that other photographers can't, or won't take. He sometimes gets help, often reluctantly, from his contact in the police department, Lt. Donovan, and advice from his immigrant father Anton.

Isn't there a photographer in We Were Soldiers?
Played by Barry Pepper I believe, the actor who played the Sniper in Saving Private Ryan.

Edit: Yep, he plays 'Joe Gallaway'. Half way through he says (to Mel Gibsons Charachter Lt. Colonel Hal Moore) "You Know Sir, Galloway's have been in every war this country's ever fought; but when it came to this one I didn't think I could stop the war. Just thought maybe I might try to understand one. Maybe help folks back home understand too. I just figured I could do that better shooting a camera than I could shooting a rifle."

Yup, which also leads to Dennis Hopper who played the crazed photographer in Apocalypse Now.

Oooh, there was that Robin Williams one where he became obsessed with a particular family and their photo's.
Just can't think of the name of the film.

Dennis Hopper, Apocalypse now ..
Robin Williams, one hour photo

Allison from Yes Man too, she does a jogging & photography joint hobby club thing. She is the girl that Carl (Jim Carey) spends time with throughout the film.

Zooey Deschanel took photos with a Fuji Instax in Yes Man and they had a photographers on rollerskates club or something like that

Peter Andre in the video for 'Behind Closed Doors'

In one hour photo, Robin WIlliams developed film, I can't recall him taking the shots, so possibly disallowed on a technicality.

However, Kalifornia (Grrrrrrrr! for her) and Closer with Julia Roberts (double Grrrrrrrr!)

David Hemmings in Blow Up
John Malkovich in The Killing Fields

He did some sneaky compact telephoto stuff through his windscreen and was given some of his own photo's at the end of the film.
Don't think I've ever seen the start so there may well be more.

shutter - a suppernatural thriller about a photographer and his new wife moving to japan to work as a fashion tog but all his images have ghost blur on them. i wont give it away but its excellent!! its relitivly new

Charlie Mopic 84 - can't remember the actor's name though...

I dont know why someone has not remade the film Blow up for the digital age, it had a very good plot line ( admitedly which drifted off a bit) however in the age of terrrorism , soy and the general paranoia which pervades society a remale would in my view be a winner.

I remember in spiderman 2 one of the journos using a D2Hs if that counts...?!

David Warner in the Omen :) and David Thewlis in the remake

David Warner suffered from a nasty case of cropping in that one :D

Karl Heinz Böhm in Peeping Tom (as a psychotic movie and still photographer!)
