Yes
Canon 60D as 4 setting Evaluated/Partial/Spot and Center-weighted average metering.
What setting would you recommend for low level aviation photography ?
 
Personally, I'd probably just use evaluative and dial in any compensation as necessary by just checking this histogram. The metering system in modern DSLRs is pretty sophisticated and gets it right most of the time. Just get to know how it works and it will be one less thing to worry about.
 
The only time I move away from evaluative is when shooting something that's vastly different to the majority of the sceen, for example when shooting white flowers against a darker background. When shooting evaluative the subject would be blown but switching to spot or centre weighted depending on the size of the subject gets a better result.

Shooting evaluative with compensation is just as good if you have time to check the result and reshoot.
 
I don't have a 60d, but have had plenty of its brothers, I use eval almost exclusively and either dial in EC, use a manual setting or exp lock when the metering will be thrown wildly.

For your question, loads of setting up time and little opportunity of checking/adjusting, I'd use Manual, set the exposure on a plane on the ground (in the same light), you're good to go. The only caveat, you need to be able to instinctively see the subtle light level changes, moving cloud etc.
