If I bought a 300mm Canon lens, and an adaptor to my Micro 4/3 camera, would the result be a 600mm lens on the MFT?

The Four Thirds sensor format used in MFT cameras is equivalent to a 2.0 crop factorwhen compared to a 35 mm film (full frame) camera. This means that the field of view of a MFT lens is the same as a full frame lens with twice the focal length.

So, it seems, yes
 
Well if you fit a 300mm lens to a MFT camera the. It's still a 300mm lens, however the field of view on the sensor would be the equivalent to having a 600mm lens on a full frame sensor.
 
The focal length of the lens is still 300mm, but the crop factor means that it gives the effect of a 600mm lens. Exposure wise it will still be f4, but the depth of field will be more like f8.

Most certainly it is do-able..

With my Canon FD 300mm f/4 on a Panasonic G2, this is the top of the Monument in London from the ground on King William Street

Stepping it up a little with an FD 500mm f/8 Reflex on the same m4/3 body gets 1000mm equivalent, this boat was about 1 Km away :)

In practice, though, it's a lot of work keeping things steady on a non-image-stabilised body, even with a tripod. The slightest tremor is magnified enormously.

Finding vistas that make use of that field of view is a challenge. Depth of field is surprisingly shallow (even at f/8) and hitting focus takes a lot of care - these are manual lenses.
