Whatever you like as long as it's 3m or narrower. I've got a 3x6m roll of vinyl. The crossbar is in 4 even length parts so you can break it down for smaller widths.
I'd suggest stepping away from the background, by lighting yourself closely you can make the background fall off to black that way.

I bought a roll of the white vinyl from them and a background stand set. Very happy with both. Also got e-mails about despatch and such of the packages which is relatively rare these days.
I've checked through maybe half a dozen alternatives to GIMP over the years and I keep coming back to it. I don't see any reason to move to something else unless I discover something it can't do that I need to.
It's doable but long winded. I've not tried myself but have read a few long enough pages on it to put me off trying for now. If you are au-fait with linux then you could give it a go, if not then I'd probably recommend not bothering TBH.
