You dont mention what camera you are using ask your mate if he has noise reduction enable/disabled in his camera menu settings. When I first did any long exposures the image would take upto 40 secs to process in camera, I disabled the noise reduction in the menu settings and they appear almost...

I understand your dilemma with live view and has you pointed earlier in the thread it will have to be viewfinder with AF on walkabout and fast moving portraits, so it’s back to the AF method of your choice, shutter button AF or back button AF, which ever you choose it’s a practise...

Have never used liveview can you zoom in 10x to confirm focus ?
