    That is on the videomic pro. The standard videomic doesn't have a +20db, and when I've used it on my D800, i've been less than impressed with the amount of noise from the cameras preamps.

    The hiss comes from your cameras preamps more than from the mic. If you use a low setting on the cameras audio controls and enable the +20db boost on the mic, you should be able to get nice clear audio.

    A bit above your budget, but the Rode Videomic pro is a great option, as it has built in preamps. This means you can then set the amps on your camera very low and eliminate that awful hiss.

    AF on most DSLRs for video is really pretty useless. I use MF exclusively when filming with my D800/24-70. Shutter speed should be twice your framerate, so for 60fps it should be around 1/120

    Most camcorders (in my experience anyway) will do just that. I used to use a Canon HV30 which could - a very good little camera and can be had pretty cheaply these days

    What to get to dev B+W?

    You can be + or - 1 degree. Black and white is dev'd at 20° C so not too far off room temp. Certainly not hot enough to need a kettle. I just use tap water and add a little warm from the tap if I'm a bit too cold, but i usually find if i leave it long enough it gets near enough to temperature.
