You allways allways should get the most from your camera, never expect to arrange the photo in post production, if you are able to do kit better just do it in the moment, its better and much faster and less painfull :P

I recomend you any camera Like DSLR, like Canon 350D it will be enought and an good lens like 50mm f1.8, or some compact with manual controls for starting.

Better have an granny image than an blurry image, or if possible use tripod to use the lower iso possible.

You have to Use ND filter, try an ND8, or an split ND filter to photograph skys.

For the best results, shoot in raw and convert to BW in Camera Raw.
