I have M1 Pro and M4 Pro MBPs (personal and work) and the M1 Pro does feel a bit sluggish now. However, RAM/fast storage are still going to be more important than processor.
You can shoot raw and apply the simulations in post. The only time that I change the simulation on the camera is if I'm shooting B&W, I switch to Acros.
I would probably go for Provia, Acros and Nostalgic Neg as my main simulations. but in reality I never use the jpegs.

I was in a similar position a couple of years back, and ended up going for the X-H2s - if there had been an X-T5s, i.e. an X-T5 with the stacked 26MP sensor it would have been a tougher decision. I also have an X-T2, so am used to the X-T bodies/handling.

For downsizing Fuji is a good bet - mainly as the lenses are smaller. They have good quality lenses designed for the smaller sensor size. A slightly smaller FF body, with a few suitable lenses isn't going to be much smaller than a DSLR set up.
My understanding is that you can use the DAM part of Lightroom, without the ongoing subscription.

I also subscribe to to the 3 copies, one off site theory. I run a NAS locally, which backs itself up to the cloud overnight and I run another copy weekly on another hard drive which is kept in a detached outhouse.
