I use gloveliners, (Lowe Alpine Powerstretch Gloves - Cotswold Outdoor) they're great at keeping off cold winds, whilst allowing you to feel all your buttons and switches. I can just about get my phone touchpad to work too.

I use Sealskinz Ultragrips, thin enough to use the controls but 100% waterproof (fully waterproof, you can immerse your hands in water and it doesn't come through).
I use sailing gloves which are warm waterproof and can be bought with or without the fingertips. Missing tips allow you to easily work your camera buttons and when done you can easily just pull them forward a bit to cover the tips and keep them warm and dry. Buy from any chandelry or online sailig suppliers.
