Wildlife video / photos gear question

I am a 50/50 video / photographer.
I shoot only wildlife and that is birds / dragonflies / butterflies in the main.

I currently use an og pany gh5 + pany 100-400mm and for video only shoot in 4k/60 and handheld.

My question is if I had £4k to start again what option should I go for as all have some issues for what I shoot it seems.

Canon r7 + canon 100-500
Pany gh6 + pany 100-400 (keep my lens so cheapest option)
Olympus om-1 + olympus 100-400

My main "wants" are
- match or better the gh5's 4k60 quality
- good wildlife tracking AF
- dual IS for videoing handheld.
- faster shutter when taking photos with continuous AF (the gh5 is awful)

Well I have narrowed it down to
Canon r7 + 100-500mm Looks like I could get that kit for 3400
or
OM-1 + Olympus 100-400mm for 3000ish

gh6 is out the window after hearing how slow the shutter is with continuous AF (and of course the AF isnt as good as the other two)
