Where to have a wildlife holiday for students?

Hi guys, a bit of an odd one this as its not really that photography related, but I figured this would be a good place to ask!
I'm president of the Natural History Society at my uni (Uni of Sheff) and we are looking into running a 5 day or so residential next year in Easter. We essentially want to do some general wildlife watching but we also want to sort out some ID courses, ecology workshops, etc (basically something so we can show we achieved something, which means we might be able to get some funding from the uni). But I just don't really know where to start looking! I figured somewhere in Scotland would be our best bet, probably somewhere relatively easy/cheap to get to which probably rules out some of the more remote islands! Accommodation wise I'm looking for a rent-able self catering hostel or something for about ~20 people.

I was just wondering if anyone out there could recommend a location with lots of stuff to do, any links to organisations that could be useful, or if anyone knows of accommodation that would fit the bill?
