What to do with my plums?

Since moving into our house we are year by year learning how to get the best crop from a mature plum tree in the garden. The problem we have is what to do with them. Last year we got nigh on two stone of fruit off it and this year looks like its going to be more.

Anyone got suggestions on how to get rid of them? Last year all the nieghbors and family had loads, and even the dog ate loads of teh ones that fell onto the lawn.

I'm thinking wine so if anyone has a recipe.... or suggestions on how to put them to good use.....

Plum jam is delicious and lasts all year, if you have too many I'd be more than happy to take some off your hands :)
 
Distill them, then distill them again. Then once more for luck. Hmmmm, Slivovice

They mentioned the problem of having too many on a gardening programme recently - there's only so much plum jam you can get through. Last night I brought some home from an abandoned garden nearby and made jam by putting them with an equal weight of sugar in the oven while supper was cooking. Needed a deepish pan cos of the frothing. This small batch will be polished off by the end of the week.

All the added sugar isn't the best thing to consume, so drying them to make prunes is a good idea. Even so, I've got dried apple I did years ago. Some donated conservatory grapes made very good currants, even though the fresh fruit was horribly sour.

Make plum rum!

Pound of fruit, bottle of dark rum and half a pound of sugar. Scale up as required.

Clean and pierce the fruit, place in a suitable container (a home brew bucket with lid will do) along with the rum and sugar. Mix it all together, seal the top. Give the bucket a shake once a day for a week to dissolve the sugar and leave it alone for 6 weeks or so to "brew". When complete decant the liquid through muslin back to the bottle, don't use absorbant kitchen paper, it soaks up too much rum. WARNING You get a little more rum than you started with.

Now the difficult bit, leave it for as long as you can, weeks or even months and enjoy. You can drink it immediately but it gets better with age.

Great for a hip flask when fishing or shooting. Very easy to drink.

Damsons make a more bitter brew than Victoria plums.

This recipe will work with almost any combination of spirit and fruit.

Don't drink and drive.

Chinese Plum Sauce (for crispy duck)

12 plums
6 Tbsp water
3 Tbsp soy sauce
1 Tbsp sugar

Cut plums into quarters, remove stones.
Place in a saucepan with the water and
simmer gently, uncovered, until soft.
Add soy sauce and the sugar and cook
for a further 10 minutes, stirring continuously.
Store in jars in the fridge.

Same for Sloe gin.

A similar idea is a Vodka Watermelon.

Take a large watermelon, and cut a round hole in it. carve out a little flesh. Pour in Vodka. Put in fridge. Over a few days feed the melon with vodka, and then eat.

Don't eat it and drive.

I think you can also use a flavoured vodka to make it more intersting.

You could also freeze cubes of it to get frozen vodka ice cubes.....
