perhaps a more experienced tog will be able to give you more specific advice however CS3 should have RAW software built in. You should just have to double click the Cr2 file and it will open up?

When i had CS3 it came with a program called Adobe Bridge CS3 - this is what you used to open the raw files, you then transferred them to CS3 from there. - you may need to update Bridge to get it to support you camera.

Camera raw 4.6 is available here

I think the 1000d came out after CS4 shipped in which case CS3 won't be able to open it by default. Adobe don't release updates for earlier versions after a new release.
The only answer if the 4.6 update (the latest for CS3) doesn't work is to download the DNG converter 5.5 and use that to convert your CR2 to DNG (adobe raw) then CS3 will be able to open these with it's claimed no loss of quality.

You could use DPP that came with your camera to process the RAW file, then import it into CS3. Would suggest though you convert it to a 16 bit TIFF to maintain the data. However the DNG route is the one I would take.
