Anybody use a Voigtlander Vito B? What's the difference with X & M shutter settings? I know V is for the self timer but what should I have it set to for normal non-flash photography?

X is normally the standard for non-flash or digital flash.

X and M will just control the flash synchronisation, namely when the flash contracts close in relation to the shutter blades opening. X is for electronic flash, whilst B is for flash bulbs.
