What ISO can you sensibly use on the 30d before the images are to bad to print to 10x8?

Don't worry about it, use the ISO that is needed to get the shot. People worry about noise too much.
 
If you don't want to start thinking about noise reduction PP, I stick to 400 and below.

800 is workable with a few cleanups.

As for noise "being a problem", it depends on whether you are creating art or just as accurate image as you can of a subject. Noise can easily be part of an arty shot but really spoils a shot that is just supposed to be glossy image.
 
Here's a shot taken with my 30D, handheld at f/8, 1/8, 3200 ISO and processed from raw to jpeg in DPP. Luminance NR was set to 2/10 and chrominance to 6/10. EXIF is intact.

In the words of Slade "c'mon feel the noise"... can you not see that in that shot even at that size?

I suppose it doesn't make a "snap" unusable and if that is all you are trying to achieve then no problem....
