I tried shooting the stars/night sky while in the middle of nowhere but I couldn't get them to show up with an exposure time of anything less than 2 minutes. By that time they had moved, so I got slight trails in my photos. Is that just inevitable given the lack of light available?

Not its not inevitable...you need to shoot with a wider aperture say f2.8-4.5 with an highish ISO say 1000 plus now well it's not an exact rule if you divide 600 buy your focal length in 35mm format the resulting figure will be about the exposure you can run for with out getting star trails...
