Magic wand to select the area to be darkened and then shift the Shadow / highlights or level sliders around until you reach the desired effect.
OR
use a "soft" burn tool brush set highlights ( well cs3 anyway) and gently work away till you acquire the desired effect.
Then switch to mid tones to blend in.
Hope that helps

I had a quick go but it ain't too pretty I think that the highlights are a little too far gone.;)

Something like this?

Try a new layer, fill with 50% gray, change blend mode to overlay or soft light and use a low opacity (10%) brush and black to burn in without ruining the original.

Oh go on then, since were all in editing mode :D CS5 is awesome..

Staff edit: Image removed. Please note that the OP does not have his Edit box ticked

what was done:
1. duplicated layer
2. changed levels on the duplicated layer.
3. used the erase to erase the horse on the duplicated layer.
4. burn tool on the original layer
5. sharpened and merged.

The easiest way though is to shoot in raw then use the recovery slider in ACR to recover highlight detail the fill light slider to recover shadow detail.
