Can anyone, in simple terms please, explain the Difference between Sharpness and Clarity??

Both look similar to me with, in my opinion, Clarity sharpening the Image better.

And would you use both?

I use ACDsee Ultimate 2018, I know it`s me swimming against the Almighty Adobe Photoshop, but then someone has to.
 
They are in fact two different things, Clarity is, in its simplest form, an increase (or indeed a reduction) in mid tone contrast, this will give an impression of increased sharpness. This apparent increase shows up more where there is fine detail.. Sharpening (assuming USM) is an addition of contrast on the edges of detail. Both have their uses depending very much on the subject.

For want of a better explanation take an architectural subject with lots of fine detain within brickwork etc, clarity, used with care will give the impression of increased sharpness.

Don't want to confuse the issue too much but different forms of sharpening suit different subjects and final usage and just about all of them involve contrast in one way or another
