Ok so i'm spending way too much money on food and would probably be a lot better off if i made an effort and cooked more often :) So i'm just wondering if anyone has any good recipes they could suggest :D Nothing hugely complex please! and quick to prepare would be ideal.

I'm currently making home made lasagne... amazingly complex i know! but it's a start i guess :D
 
Recipe for "smoked salmon pasta in garlic and mushroom cream sauce". :D

Description:
Quick and easy. Done in 15 minutes.

Ingredients:
1) Garlic
2) Button mushroom
3) Smoked salmon
4) Single cream
5) Pasta
6) Olive oil
7) Salt

Directions:
Scale proportions to your liking
1) Boil pasta with a bit of salt and olive oil
2) Chop up garlic, slice up button mushroom and dice up the smoked salmon
3) Heat olive oil on pan, throw in garlic and stir until brown
4) throw in button mushroom and brown it a bit
5) throw in smoke salmon and cook it a bit though it's already cooked
6) throw in single cream, stirring gently
7) drain pasta when done
8) salmon cream sauce should be done by now

Done.

Selected spices, Cumin, Paprika, Salt, Pepper, Basil, Chilli Powder

lightly fry the chopped onion and garlic(sweet out as they say)and then chuck in the mince, fry lightly for 5 mins, then turn down and simmer. Add the spices and stir thoroughly. Add the beans and simmer on very low heat for at least 45 mins. Boil rice and serve when ready. Make loads and make it last a few days!

Always a winner, and cheap too (though it does require a toasted sandwich maker)...

Lightly butter 2 slices of bread on the outside
Mash-up Crunchie-Nut Cornflakes with a big dollop of golden syrup
Put mix & bread in sandwich toaster (butter side out)
Enjoy when it pings

Watch out though as it's tongue burning when it first comes out, and (oh yes) leave the mess for someone else to clean

Lemon chicken wrapped in bacon with pasta:

Nice and easy!

You'll need 8 rashers of bacon, some mixed dried herbs, 4 chicken breats, 2 lemmons and enough pasta for 2.

First off, put each breast on 2 rashers, sprinkle on some herbs to cover chicken with a fine layer.

Next, wrap the rashers around the chicken to form the classic 'blanket'

plop them in a baking tray and then quarter the lemons and squueze juice over the top. Chuck the quarters in the tray and discard after cooking.

Cover the whole lot in foil and chuck in the oven at Gas Mark 6 for 20 mins. After 20 mins, remove foil, turn oven down to 3 and cook pasta.

When pasta is cooked (al dente is best) check chicken is cooked (sharp knife into plumpest part and make sure juice is clear) serve up. :clap:
 
Dice up into 1/2" cubes about 1lb of lean stewing steak. Season with salt n pepper and brown it off in a hot frying pan with some olive oil and a couple of cloves of crushed garlic. Once browned off chuck it all into a slow cooker. Now add to the slow cooker 1 tesco vegetable stew pack and a tin of plumb tomato's (minus the juice). Make up the juice from the tomato's to 500ml, bring to the boil and add a stock cube. Chuck it all in the slow cooker and leave it on medium heat for about 6 - 8 hours. Prep time is about 10 minutes.

For that added bit of enjoyment chuck a bag of hovis bread mix flour in the bread maker with some water and butter. Do this about 4 hours before you eat.

Fresh stew and hot (fresh) buttered bread, mmmmmm :D

It's OK, I start cardiac rehab next week, so it's twice a week in the gym for at least the next 6 weeks. Weight on - Weight off ;) :thumbs:
 
A simply curry is easy and don't let anyone tell you otherwise. Invest for a start in some whole spices rather than ground - and a pestle and mortar (the heavier the better - there used to be a nice jamie Oliver granite one available for not too much dosh). Ready ground spices are all very well but quickly (6 months or so, less if stored somewhere light) lose all their "oomph".

Good starting spices for a curry would include coriander, cumin, pepper and chilli - adust the amounts to suit your own taste. Turmeric is good for colour but adds very little flavour unless you can get hold of the root and bash it up yourself.

Meat wise go for Beef, lamb or chicken to keep it vaguely authentic. not many Pork curries on the menu at your local Indian I'm guessing!!! Start by sweating (frying very gently as Matty says above) some onion and a little garlic in a little oil in a frying pan or heavy based saucepan. The aim is to simply get it softened but not very coloured. then up the temperature and add your meat. Mushrooms are less authentic but taste nice and can be added once the meat has started cooking.

For the sauce it's really up to you - a can of coconut milk adds a thai edge (If heading that way then swap the spices above for lemongrass (fresh or from a jar/tube) ginger, some fish sauce (Nam Pla) and some lime juice )Or kaffir lime leaves if you can find them) and use fresh chilli rather than dried or powdered. For a korma-type dish then go down the line of a cream based sauce and add ground almonds as a thickening agent and go light on the chilli. For a tomato based one then a can of Tesco value chopped toms and a squeeze of tomato puree is hard to beat - that would be more suited to a hotter dish in my opinion.

Remember - whatever you're cooking taste it as you go along and learn to detect what seasoning it needs - you can always add more but taking out salt or pepper once you've added it is impossible! (Although too much salt can be partially redeemed by dropping in a thick slice of potato and removing prior to serving. Somehow this "soaks up" some of the excess saltiness. In the same way a dish which has been made a little too spicy can be pulled back by adding a little lemon or lime juice.

Chicken breasts browned off, wrapped in bacon, in oven proof dish, pour over tin of chopped tomatoes cover in little grated cheese put in the oven and cook for 20-30 minutes, serve either with rice, pasta, potatoes up to you.
 
why are your chicken breasts browned off?..have you been taunting them again Sue :lol:

I like the sound of that recipe...no veg so Barry might eat it ;)

the easy way

=pour one can off coconut milk into a deep frying pan (preferably with lid) or a wok, heat gently
=add 2-3 teaspoons of curry paste (try to keep away from blue dragon its ****, i use foods of the world or something like that from tescos) heat
=add two chicken breasts chopped up
=add some finely chopped garlic, ginger and lemongrass
=add half a green pepper (sliced) and some babycorn (cut lengthways)
=keep heated for approx 25mins
= serve with rice in a deepish plate as the sauce is rather runny

Dead easy, and always satisfying, is oven roasted veg and new potatoes. Just chop up as many or as few as you like from things like peppers, mushrooms, onions, asparagus, cherry tomatoes, courgette and cover in olive oil with some finely chopped garlic and put in the oven for 30-40 minutes.

I hope I don't need to give instructions for new potatoes!

Usually I serve it up with some nice pork chops which I just gently fry in a little olive oil and butter.
 
ive just embarked upon my first roast dinner, belly pork roll, with roasties, carrots and gravy

Honey and mustard chicken (very easy):

Dice some chicken breast and brown in a hot pan and remove. Add some butter and fry of the mushrooms, add 1/2 pint stock, tablespoon of honey and table spoon of grain mustard and reduce, add the chicken, table spoon of creme fraiche and heat through for five minutes until the sauce reaches the consistency you want, just before serving add some Tarragon. Serve with potato croquettes or saute pots and vegetables of choice.

Quick curry:

Fry off diced chicken breast with onions, mushrooms or whatever, add some curry powder and a tin of evaporated milk with some sweet chilli sauce and simmer for 15-20 minutes. You can also add raisins or any other ingredients that are in the store cupboard. Doesn't get much easier than that.
