Putting a new OS on HTC Desire

Just been looking through the XDA Developers site, and JESUS!!
How difficult is it to load a new OS/ROM (???) onto a phone!!!!!!

Anyone know somewhere where there's instructions in ENGLISH on how to do it?

They do one of the most popular roots for android and its based on 2.3 (gingerbread)

Start off by rooting it through www.unrevoked.com

You then install Clockworkmod from the market in order to install the ROM. ROm Manager is worth installing as well as it will allow you to download the ROM in the app.

Then if you want to keep the HTC Sense look you can use Paul O'Brien's ROM at www.modaco.com or if you aren't worried about sense the the cyanogen ROM is good.

Personally I use LauncherPro rather than ADWLauncher in the Cyanogen ROM, but that is personal choice.
