I would recommend joining the National Trust for entry to places (like Winkworth). Not only are they a great day out if you like history/beautiful houses/gardens, they are very photogenic and some (like Uppark on May 13th) do organized photography events. There are plenty near you and If you like animal shots there is Petworth Park for its deer.

For water birds and the possibility of great sunsets/landscape all in one small rural location there is always Hartley Maudit church and pond near Alton. The steam trains on the Watercress line or for dragonflies there's the wetland meadows near Elstead Mill.
