I know what you mean - I get that problem up in the hills a lot. There's a couple of ways round it... There are plenty in-depth guides already written about these, so I'll just fill in the basics...
Filters. Get a couple of ND grad filters (I use ND4 and ND8 Kood filters) - you can get a Cokin "P" holder, or just use blu-tack. Great for bringing a dark foreground back into the light.

Multiple exposures or HDR - does involve a bit of software jiggery-pokery though. Camera on a tripod, 3-5 exposures at -2,-1,0,+1,+2 stops (for example), and combine using your favourite bit of software.
