when i open a raw file in photoshop i am 1st greeted with a screen to make all the major raw adjustments, saturation, contrast, clarity etc i then adjust and click open image to reveal what i would call the standard or normal cs3 screen(hope im making sense)but when i convert to hdr or stitch photos i am not given the option of the 1st screen which then means im limited to jpeg options.am i missing the obvious?

does the same apply for stitching aswell?

You open the RAW or DNG files in to Photoshop, the camera RAW dialogue opens up ("screen to make all major raw adjustments"). Make any changes you require, hit open images.

Photoshop will now open the RAW files and display them as per usual.

Now, you can convert to HDR or stich the images into a pano with the adjustments you made in Camera RAW when opening the images up in Ps.

Hope that makes a bit of sense.

EDIT: Also after you have made a HDR image or a pano and have saved it as a .TIFF, .JPG etc, you can still actually open it up again in Camera RAW. Simply go to File > Open As. Select the file, then in the drop down select Camera RAW from the list. :)

You should not be limited to jpeg but be able to choose 16 bit TIFF or PSD {which is a better choice for further editing) when converting in Camera Raw, unless your HDR program is limiting you to jpeg..

In CS3's raw editor click the blue line whixh say's "Adobe 8bit ect......." an option; box will appear, in the "8bit" section the drop down menu will include the "16bit option" choose this. Do all your editing in 16bit mode, then when saving goto image/mode, in the options choose "8bit" you can then save as jpeg, you can before doing this alsxo duplicate file, and save as 16bit PSD.

But once saved as a jpeg tiff or whatever, you can have CS3 open up your image in ACR (raw editor) every time if you wish.

im a real novice when it comes to photoshop, thanks all for your input
