Photoshop 7. Best way to change to B+W and remove red eye?

Hi all, still very new to this and am really enjoying looking at all of the images and expertise available on this site. I have got a copy of photoshop 7 and am very much in the process of learning to use it. Could you give me some pointers as to the best way to produce a B+W image? Also any suggestions for fixing red eye?
Any comments/suggestions would be great.

One of my preferred methods in PS 7 was to use gradient map, if you convert to B&W surely red eye wouldn't be an issue, not sure if PS 7 has the red eye reduction tool, if not you can select the affected area with the magic wand tool expand a pixel or two then desaturate to take the red out.
