Photography Day at Gentleshaw Wildlife Centre

Weather permitting, I'm going to a photography day at Gentleshaw Wildlife Centre on Sunday ( http://www.gentleshawwildlife.co.uk ), with the hope of getting the opportunity to photograph birds of prey and owls in flight, I've no experience in this area - I assume a fast shutter speed is critical along with good panning technique.

Should I be using something like 1/500 sec or faster?

I would welcome any hints, tips and suggestions. Fortunately the centre is only 20 minutes from home, so I have the possibility of a repeat visit to future events.

Thanks Scott, I'll aim for 1/1000 sec. It looks as though the ISO will be going up, it's a dull cloudy day here, windy too - I wonder if they will fly the birds - I might have to make do with "static" shots.
