What should I do about out of gamut areas in my pictures when printing?
I use a r3000 with different papers (at the moment its Fotospeed pearl).
I've seen videos on how to adjust the colours to bring them back but this affects the image in a negative way in some cases.
Should I just print & let the printer decide?

I think it all depends on the image and the colour. ne quick option is to change the rendering intent to see what difference this makes. It may make a more pleasing result. However one overall rule may be a bit constrictive. See what soft proofing looks like. Sometimes you can live with the out of gamut colours being left as they are , especially if they are solids with no detail. Where graduation is involved then you have to look at the overall effect to make a judgement.

Don't forget though, if they are out of gamut then they are not going to print as vivid on the paper as they are on screen. It's a bit suck it and see I'm afraid, .
