Being new to large format can anyone tell me which way to tilt the front standard to extend what is in focus? ie what appears to be an increased depth of field.

Tilt the lens towards the ground or tilt the lens toward the sky?

Also, when using tilt, do I need to couple this with rise or fall?

You would tilt the front standard forward (towards the ground) to increase the amount in focus.
You don't need to use rise or fall at the same time.

I recommend getting a book like one of these:

It will be money well spent. Someone did post recently a link to a free PDF which covered the same ground, but I can't find it at the moment.

Between the time of making this post and now, I found a downloadable guide to camera movements.
And you are obviously correct about tilt down to increase the amount in focus.
 
Do a search for Cambridge in colour and look for tilt shift in the section on lenses
