I am looking to buy a used Nikon 200-500mm f5.6 lens. I have looked in MPB and most of the ones they have listed have a disclaimer that "The internal optics have a small amount of moisture, but this doesn't affect functionality." Is this a common problem with this lens? If so doesn't that increase the risk of fungus? I'd like to be sure before I buy anything.

Yes to both.
Dust and moisture is a pretty common issue with push/pull zoom lenses. When the lens is extended it pulls air into itself, along with whatever contaminates. And when collapsed, moisture on the extended barrel may get past the seal.

OK. So maybe I go back to Plan A which was the 200-400mm f4 which zooms internally and being a more 'pro' lens I assum has better weather sealing?

Never had an issue with moisture in my 200-500 and I doubt very much that MPB descriptions are reliable for each item, more likely 'cut & paste'.
If there was one lens I had and would never buy again it would be the 200-400 Mk1.

I don't know if the sealing is better perse, just that internal zoom is much less demanding. I have no personal experience with either of the lenses.

Got the 200-500mm f/5.6 new nearly 10 years ago.

Used it in some pretty sketchy environments and had no issues with moisture, weather sealing etc.
