Not sure if this is the right section this question but

I have a new iPhone and I'm going to cut my current sim down so it's nano sim sized, should I back up and deauthorize my old iPhone first?
 
the sim part doesn't matter, won't affect backup, but still no harm to backup the old iPhone first.
Personally when I get a new iPhone, rather than use a backup, I use the opportunity to start a fresh.
On the new phone, the important bits i.e calendar, contacts and email will automatically update from iCloud. I then go through the "purchased tab" on iTunes and download whatever apps I need.

If you want to wipe your old phone, then go to "reset", and erase all content.

Why not contact your service provider and get a new sim. I did this and had the new sim in 24 hours. Then simply transfer your old number to the new sim. Usually takes the system a couple of hours to do this but saves the hassle of cutting the sim.
