OK apart from cropping I've not done much in PS. Just installed CS2 and been playing with a couple of pics. I shall post the original, then say what I did (only simple stuff at this stage) and I'd like some comments on the results, or some ideas as to what you would have done differently - feel free to play with the pics yourself :)

Here's my first... This is a castle type place in the Highlands in Scotland. Saw it when I was out on a Boat, and I cannot remember the name of the place!

For me the first cropping really provides the impact, scale and nature of the subject.

Impressive subject and well composed - trees look a little washed out behind though - especially when compared to the foreground ?
 
first crop is good, maybe a little more from the top, dont like the straight de-saturated look though, as some say, need to do some dodging and burning on it.

first works best for me, the crop i mean, gives the image a bit of focus, nice
 
I like the cropped colour version, you can really pick out the different levels of detail :)
 
I prefer the processing on the second image.
I would have left the foreground water in the shot,
placing the building on the upper third, and cropped a
little from either side.
 
I think the B/W conversion needs a little more work to bring out the best in it.
The colour crop works best though. Nice, muted colours.
 
the building needs a little more space above, other than that its fine.
