Having just recently taken some photos on my EOS 80D I found that when downloading to my PC that all but the last photo I had taken had disappeared. Is it possible that somehow my camera is overwriting the previous image?
 
How are you downloading?
Are you removing the memory card and using your PC? If using the card in your PC then I would suggest using another card, formatting it in the camera and then seeing if that makes a difference.
Does the image number increases correctly?
 
Long shot but does it have a demo mode that could have anything to do with this,ie limited memory so it overwrites,dont know anything about Canon so its a wild guess,
 
How many folders are on the card? On Nikons at least when you reach DSC_9999 images, the next appears in a new folder as DSC_0001 again if I remember correctly. Hopefully may be something similar :)

Sorry - misread the original, so my original response is irrelevant.

Let me just get this right, you are saying that, of a number of images taken, you only have ONE image on the card - the last one taken?

It shouldn't be possible. If that really is happening, then either the card is faulty or the camera is faulty.

But we need a bit more information from you before we are justified in drawing that conclusion.
 
Try getting the card info. If it's a 16Gb card and is reporting a much smaller volume then it's possible that the card itself has failed If on the other hand it looks OK and states that that there are files on the card, try copying the card contents directly to your computer and see if you can see the images that way . Also can you review the images on the card in the camera? I had a similar experience several years ago. The card controller failed and I could only access half of the card. Managed to get most of the images off but binned the card straight away
