I've just taken delivery of a Lencarta twin flash system and I'm very pleased with them.

Can someone point me in the direction of a good please to read/learn about the flashes '5 stops of power' and what each value from 1 to 5 means/does, and how it relates to my aperture/shutter speed.

Thanks

Erm...
5 stops of power means that it adjusts over 5 stops, i.e. from 1/1 - 1/32 (which some other firms describe as 6 stops)
So, for example, if you're shooting at f/11 on full power, if you turn the flash down to half power then you will need to set the aperture to f/8
1/4 power would become f/5.6,
1/8th power would become f/4
etc.

The shutter speed is irrelevant. See this tutorial
