Quick question: does the hot shoe set up hinder the infra red part to the flash? Was wondering whether the ST-E2 would still work ok in this set up or is radio trigger necessary?

Optical is fine I've used optical triggering with mine. You can always rotate the flash head around 180 if needed.

Westcott's on the other hand are a different matter.

Yep, I've rotated mine when using IR before and it's been fine.
