Hi Karen.
I think it will resize photos to suit so, unless you have limited space or need to upload masses of images, i would just let it do its own stuff.
I just uploaded 43 images, about 4mb original size of each and it takes up 27.8mb. Looks like it has resized them to around a half mb each.
Quality at that size is excellent.
I use iPhoto on my Mac and it does all this automatically.

iTunes will do the resizing for you also (well at least it does for my iPhone, no reason why the iTouch will be any different). For Photo syncing, I just point iTunes to the folders I wish to transfer to my iPhone ,and iTunes does all the rest. I,m assuming that we are talking jpegs here, as RAW probably isn't supported.
