How to capture sea mist?

I always struggle to capture a sea mist and do it justice. i find it shows up best when i reduce the colour but then the whole picture seems to suffer, i'm normally kayaking at the time so can't use a tripod.
any advice please?

I would start the same way as I approach mist on land. With +1 stop of exposure compensation.

You may find a polariser helps bring the contrast up.

I reckon this'll do the opposite to what OP wants

Shoot with the mist between you and the sun (ie back light the mist). The lower the sun, the better.
