help with image sizes

When it comes to resizing my images for prints using photoshop, i go to image -->image size obviously.

Now im looking to have my portfolio at 11x14 - but if i change my image size to 11x14 i have to deselect 'constrain proportions' to get it to let me input those sizes which obviously distorts the image.

How to i go about changing the image to fit the required size correctly?

Sorry if this is ridiculously simple but ive never changed to print sizes before.

If you want 11x14, you'll have to crop to those proportions, then resize.
Although you can do it in one!
 
Well if i look at the image size before i alter anything it states the image is 59.33x39.556inches.

What is the best image size for me to use? i us a canon 450D?

Is there an image size that better corresponds to the size my camera shoots? as i dont want to be getting great shots and then cropping every shot i ever take
