Help! Manual EOS 5D settings for panoramic photos

Dear Forum,

Hello everybody, first poster here. I am new to photography, and I was wondering if there were any technical wizards out there who could advise me of which manual settings I should be using on a Canon EOS 5D when taking panoramic photography.

I use a 5D with a fixed 50mm lens, and have historically used the following process:

1. Set focus using AF for the area in the view I want sharpest;
2. Switch to manual to fix focus;
3. Set camera to 'M' and set to either F8 or F16;
4. Set shutter speed to obtain correct exposure, and then bracket this to get some over- and some under-exposed.

Using this method I am having issues with noise and images that are not the sharpest or are washed out, and am desperate to ensure I am doing things the right way.

I guess there are a couple of questions re: ISO speed (what should I be using) and focus (am I doing this the right way), but it may be that I am completely balls'ing it up!

Any help much appreciated.

Washed out? With the correct exposure this wouldnt happen unless you are getting something reflecting back altering the exposure. Noise should be minimal the lower you ISO is.

ISO100/200 would be ideal if you have a tripod at hand. As for focusing, if you plan to use those apertures, I would aim to focus about two thirds into you shot in the simplest of terms.

The easiest way to help is seeing a photo.
 
#1, Tripod - ideally with a panoramic head.
#2, Take a few meter reading across the scene.
#3, Calculate an average shutter speed for your chosen aperture.
#4, Set the aperture and shutter speed in Manual mode and set focus (in MF mode).
#5, Shoot as many shots as needed to cover the scene, allowing about 1/3 frame overlap on each shot.
#6, Stitch using your favoured software.

If you're having images with noise or they're 'washed out' I'd guess the exposure is off. What are you metering?
Using a tripod and apertures smaller than f8 your images should be sharp. Are you handholding and using slow shutter speeds?
 
Maybe worth to mention, vertical shots for Panorama Photos works for me the best.
