Currently picked up a YN560-II speed light. Im shooting with a Nikon D3000 in manual mode, it seems that no matter what the settings I change in both the flash and the menu I either get blown out photos or half blown out depending on the position of the flash... any suggestions ?

Can't see the photos that you've posted but I hazard s guess the flash should be in TTL mode. That way the camera will control the flash output If you use the flash in manual mode you need to set an appropriate aperture with the shutter speed no faster than the sync speed.

Looking at your camera settings you also shooting over the sync speed (1/500)...you will need to enable high-speed sync if these flash units can do that...

Try TTL mode (Auto) and see if that helps with just adding fill to the subjects.

Pictures 2 and 3 definitely show the shutter speed is too high and out of sync, the second curtain has started to follow hence the banding. Looks like the aperture is also too wide for the flashes output, try closing this down a bit and using a shutter less than 1/200
