I'm hoping to replace my old tripod with a carbon jobby, since I also shoot birds I am thinking about a Gimbal head as opposed to a fluid pan and tilt. Anyone have any thoughts on this?
 
Never heard of a gimbal head being used for video - how smooth a motion can you get without fluid opposition to your hand moving? Especially with a long lens, is assume not very.

Get a decent fluid head imo, unless anyone can advise otherwise :s

I usually use the manfrotto 504 heads, but at focus I was VERY impressed by the new unreleased 502 head - miles better than the crap 501, and apparently its only going to be about 30 quid more. Depends how much weight you're gonna put on it
 
As Dave says, a fluid head is best for video work. Sachtler are one of the major tripod system manufacturers for broadcast HDTV and film cameras. Their heavyweight systems are expensive (some are well over £10k) but they do lightweight systems too.

Have a look at the Sachtler Cine DSLR and the Sachtler Ace M in the first section here: http://www.sachtler.com/en/products/camera-support/fluid-heads.html. The Cine DSLR is the one I'd choose (for DSLR video) but it's more expensive than the Ace M.
