HDR, aperture and no metadata

I've had a look and a guide to photo matrix says to either shoot 3 images with different exposures or if you have a raw image save 3 tiffs with different exposures but it says make sure there is no metadata saved for this

First questions is can I export the tiff files in aperture without the metadata?

Is they any difference in the 2 methods and if so which is the best to use?
