I have some chilli plants that are fruiting fairly well.

The Scotch Bonnet plants have chillis which are fully ripe(they are completely red) which I could pick now but does anyone know if the flavour will develop more if left on the plant.

I'm guessing if I took them off the plant it would encourage further fruiting but at this time of the year I think more fruit is unlikely and I'd like to build the plant up to help with overwintering.

General consensus is pick them 3-5 days after they have ripened.
After that they will start to go past it and you are taking resources away from the plant to producing more flowers - not likley now if it has a decent crop - or ripening the rest.
 
with my habers the darker they go apparently hotter , i tend to leave them on the plant longer than most
the jalas i pick quite soon once they get a decent size they get scoffed daily
