Note ~ reading the above and IMO you should get a minimum of V60 grade and as the file sizes are largish minimum of 64GB.
Oh, no idea if this still applies but at one time with Canon and especially when two slots meant one CF and one SD.....if you had two different speed cards the camera would write to both cards at the speed of the slowest of the cards.
Having said that now off to look at the R7 specs
Edit~ I found this in the specs
"UHS-II high speed cards are recommended for 4K video recording and high speed continous shooting"
But no mention that the two slots are rated differently, so by inference they are both UHS II
