Looks like a spectacular trip and at the very least, an interesting read and superb visual of your journey and experience.

My partner is a teacher and took a large number of schoolchildren to Ecuador four years ago which covered some of your itinerary. This was a volcano trek, a jungle trek followed by a few days at 'poor man's galapagos' not very far from the actual Galapagos islands. It's a trip she will certainly never ever forget.

Let's hope the tourist money does filter down to the people that really need it (and earn it) and there doesn't end up being a McDonalds in any town, let alone every town!
