I've only been to Edinburgh a few times, but most of the places are there in the video that I remember. It is a beautiful city.
As for the video, I found myself jarred by a lot of it.

Some parts seem over saturated, almost a bit 'OTT HDR' effect, others not. It seemed to flit from different times of day. If there are noticeable times of day in videos like this then I like to see it in the video in sequence, earlier to later or vice versa. I know it may be difficult to always get things to match from different days.
A lot of the timelapses don't work for me too. Wide views with little movement in the clouds, and/or on the water, and maybe a tree in the periphery as the main eye catching part of the time lapse, it may as well have been video, but even as a video there would be little interest in what was shown. For me the odd timelapse from street level is OK, but to have a lot of them showing not much apart from people moving, and in one case cars/vans very close at traffic lights with a person cut as just head and shoulders close to the cameras about to cross the road makes me think why!

And then in places timelapse interspersed with normal video of the same scene, again not showing much didn't work for me. I think a higher viewpoint works better with people/traffic moving, not always possible I know, but unless there is something interesting about the way the people/traffic are moving, a large group of people moving together for example, it is probably not a compelling clip. There is a clip of a church, and though the clouds moving was nice, all the people and traffic at the bottom have been cut in half.

There are a few video clips that are not that interesting either and seem to be in there because you took them and wanted to use them.
Some of the drone footage was very similar in different places too. I think Holyrood House had a few different clips of the drone rising from slightly different views, where a clip of it rising and moving around the building may have been better if possible. But showing a location, then different one, and then back again doesn't work unless showing a route through the city imho.
I'm sorry if you find any of that too harsh, but that is just what I felt watching. I do the odd timelapse, but generally stick to a static view, for a short clip, have never used a drone and generally don't do video, but I have seen a lot of similar videos. So take all that how you will.
