Change colour profile default in Lightroom?

Create a preset with that profile selected and set that to apply on import. It will automatically apply the preset to all Raw files on import then. Or I think there's a setting to match Camera settings, which will apply whichever profile was selected in your camera on import. I can't remember where these are in the desktop versions of LR as I only use my iPad for processing now but they will be in Preferences somewhere
