Am thinking of buying an EOS-M now they are so cheap but can anyone tell me if it is possible to switch off the touch screen? - Am a bit worried it is too sensitive and will keep changing settings when it brushes against your body.
 
You can turn touch shutter off, I'll have a look if the whole thing can be deactivated but I would add it's one of the best touchscreens I've used (and most functions are most easily accessed via the screen).
 
I don't have mine anymore but I'm pretty sure it can't be turned off completely. I remember reading (before I got mine) how it was very annoying that by just touching the screen you could move the AF point/area by mistake.
I did find this very annoying, and couldn't fid any way to turn this feature off, although you can disable the touch to take the shot feature IIR.

I found the camera a bit too sluggish to use and sent mine back, but the IQ was good and if it wasn't for having a Canon S110 I would have kept it.
 
As said above, you can turn the shutter off but not the screen. As it's got no viewfinder there would be nothing to show you what you're shooting if you turned it off. I'm getting mine for christmas but I had a little play with it and I did manage to stop the focus point moving about by touching it, but it was more by accident. I think it was in Flexizone AF/ Single point or similar but not sure. It has a setting for making the screen more or less sensitive as well which might help with keeping the AF point where you want it but aqain I'm not sure until I get to use it again (hurry up christmas). I took a few shots with it attached to my Sigma 150-500 OS and got some nice shots of some starlings in the trees, it'll take some getting used to after using dslr's but the IQ does look promising so far.
 
Even if the focus point does get moved around the screen you can re-centre it by pressing the bottom of the wheel (6 o'clock position) and it automatically goes back to the centre of the screen.
