Depends entirely on the effect that they are trying to achieve. There isn't one motorsport setting. fast shutterspeed, slow shutterspeed, wide aperture, narrow aperture its all up to you as the photographer to adapt to the conditions presented to you in order to get the shot you or your clients want.
 
Agree with what you say but I'm not on about shutter speed etc was more thinking about the in camera settings !
