Best intervals for my time lapse

If it was me I would be thinking of 1 shot every two seconds. Which if you where there for 2 hours, and using 24fps playback, should give you about 5 minutes video.
 
5 mins watching a sunrise would get boring
I'd try to get a 2 min film, the suns movement would be more apparent too making it more interesting.
 
Personally I would be looking to get less than 2min... it may not be what you're after but if you look at films and TV that use timelapses, they are usually only a few secs long. Why not try recording a few short ones and editing them together?
 
Don't forget though you can always use a video editing programme to speed things up further. I would argue better to shoot too many frames than too few.
