This may be a daft question but I am no computer expert but what are the differences between Macbook Pro destined for the USA versus one for the UK (apart from the different keyboard and the plug supplied)?

That’s it. I always buy US models due to more attractive price - last few have been from Florida and Canada. Thinking about it, most of the stuff I get is from the other side.

Although prices quoted here include VAT and whatever duty there might have been. USA prices don't and if you can find a state with low or no sales tax, that's good...
 
Keyboard is the main one that comes to mind, the other is warranty however unlike a lot of companies I think Apple have an international warranty?

Not bad at all. If you're ever in Canada that's a good option too. What I tend to do, is buy a use Mac that's still under AppleCare. I needed a backup so got a 13" 2 TB under Apple Care Plus for another 2 years, and that cost me about £450 - got that in FL in March. And my main machine, a 2021 M1 Pro 64Gb 16" I got about 2 years ago now, got that in Ontario. for about 1400 I think it was. Again, under apple care plus
 
I'm used to the regular keyboard anyway, used it since I was 14 on m first ever family Mac! I tried the one with a weird big enter key and that just through me off. Regular size enter key all the way!

Yup. so yeah, if you're buying new, juts get yourself to an Apple Store or even apple refurbished and just get it off there. You're good to rock and roll!
