Everyone has their own method, but I would shoot in colour, RAW, and use black and white conversion in lightroom. You maintain control over each individual colour channel this way.

Depends on your preferences really. I like deep shadows so I raise S tone, and I also reduce noise reduction. Whether I use a colour filter depends entirely on the scene.
